Cut off the top of the bagels and scoop out the bread on the inside. Brush both sides of the bagels with melted butter, then sprinkle with cane sugar.

Mix the mascarpone with the cane sugar and pistachios. Smear the mixture onto the bagels and scatter with the raspberries. Then put the top back on the bagel.

Place the bagels on the cedar wood planks and heat them lightly on the OFYR. Rotate them horizontally (do not flip them), so all sides are evenly heated.
